Green Onion Quick Bread
1 cup all purpose flour
1 cup whole wheat flour
2 tsp baking powder
1 tsp sugar
1/2 tsp baking soda
1/2 tsp salt
1 bunch green onions, chopped
3/4 cup buttermilk
3 tbsp butter, melted
1 egg
1) Preheat oven to 350 F. Whisk together the dry ingredients and the green onions in a large bowl.
2) Whisk together the wet ingredients in a small bowl and pour over your mixed dry ingredients. Toss together with a fork to make a sticky dough.
3) Scrape dough onto a floured surface and gently knead 10 times.
4) Transfer to a parchment paper-lined baking sheet. Press into a 7" round loaf. Score the top of the loaf into 8 wedges with a sharp knife.
5) Bake for about 35 minutes and enjoy!
Note: I used 1 1/2 cups of all purpose flour and 1/2 cup of spelt flour for my loaf. We find that we like this ratio of flour mix in our breads. Also, if you don't have buttermilk at home you can make your own by adding a tablespoon of white vinegar or lemon juice to a cup of milk. Let it stand for about 5 minutes and use what you need!
