Recipe - Crustless Fresh Sage, Ham, and Gruyere Cheese Quiche



This is the original recipe for the quiche I made this week. I never follow it exactly. I use whatever herbs, meat, veggies, and cheese that I have available, and it turns out delicious every time! This week I used fresh chives from the garden, ham, proscuitto, and mozzarella cheese.

1 slice soft whole-wheat bread, diced
3 oz. deli ham, finely chopped
1/4 cup minced scallions, or to taste
1/2 cup shredded Gruyere or other intensely flavoured Swiss cheese
3 fresh sage leaves, thinly sliced
4 large eggs and 2 egg whites
2 tbsp whole milk
1/4 tsp freshly ground black pepper

1. Rub a tiny pat of butter on the sides and bottom of an 8 inch round nonstick baking pan. Add, in order, the bread, ham, scallions, cheese, and sage.
2. Whisk the eggs, milk, and pepper in a bowl. Pour the mixture into the baking pan.
3. Bake in a 425 F oven for 20 minutes, or until the centre is firm and the top is golden.
4. Place on a rack and let cool for five minutes. Cut into wedges and serve.

I got this recipe out of a 2005 Marie Claire magazine and have been making it ever since!
