My mother made the most delicious pumpkin curry soup as an appetizer for our Thanksgiving family dinner this year. I was finally able to try out the recipe for myself and it turned out wonderful! It was the fastest soup I have ever made - about 30 minutes - so it is perfect for a quick weeknight meal.
The recipe I am posting here is from the Style at Home website and it is very similar to my mom's recipe. The only difference is some of the spices and the garnish. I made real bacon bits to garnish our soup instead of pumpkin seeds because bacon is always better :)
